Baby Shower Salad Recipes

Baby Ginger Chicken Salad

Serves 10-12 small servings

Ingredients:

4 tablespoons vegetable oil

3 tablespoons fresh grated ginger
2 cloves of chopped garlic
2 tablespoon rice vinegar

2 tablespoon soy sauce
4 tablespoon sesame oil
4 boneless skinless chicken breasts
1/2 red bell pepper, cut into thin strips

1/2 yellow bell pepper, cut into thin strips

2 small oranges or 1 can mandarin oranges

½ cup of cashews (if desired)
Organic Greens (enough to fill a big salad bowl)

 

Directions:

 

In a large skillet mix oils, garlic, ginger, soy sauce, and vinegar until hot.  Add the chicken (cut in thin strips) and cook until white (fully cooked).  Cut the peppers and toss in with organic greens, add the chicken to the salad and drizzle the pan juices (after letting cool for 15 minutes) over the salad as dressing.  Add oranges and cashews and toss.  This one is sure to get your baby shower guests drooling!

Old Fashioned Potato Salad

 

Serves 10-15

Ingredients:

5 pounds red potatoes

½ a dozen of eggs

3 cups mayonnaise

1 large white onion, diced

3 green onions, thinly sliced

½ green bell pepper, seeded and diced

3 stalks celery, thinly sliced

2 teaspoons salt

1 teaspoon ground black pepper

 

Directions:

 

Clean and cut potatoes into cubes.  Boil potatoes for 20 minutes or until tender.  Boil eggs for about 10 minutes, drain hot water and add cold water.  Let the eggs cool, once cooled, peel them and chop them into small cubes.  In a large bowl, combine potatoes and eggs. In a separate small bowl mix mayonnaise, chopped onion, green onion, green pepper, and celery. Pour the mayonnaise mixture over the potatoes and eggs and season with salt and pepper.  Mix well and cover, and refrigerate for several hours or overnight.
