Baby Cut Sugar Cookies

Ingredients:

½ cup of softened butter

½ cup of shortening

2 cups of sugar

1 teaspoon of baking soda

1 teaspoon cream of tartar

¼ teaspoon of salt

3 egg yolks

1 teaspoon of vanilla

1 ¾ cups of all purpose flour

Directions:

Beat butter and shortening on medium speed for about 1 minute.  Add sugar, baking soda, cream of tartar and salt.  Beat in egg yolks an vanilla, and as much flour as you can.  Stir in the remaining flour.  Roll dough out on a floured surface and cut with baby themed cookie cutters, such as pacifiers, baby bottles, or baby booties.  Place cookies on a cookie sheet and bake at 300 degrees for about 15 minutes or until sides are set (not brown though).  Let cool, and if you would like ice them with blue or pink icing sugar, or choose colors that match your baby shower theme.

Baby Coconut Macaroons

Ingredients:

2 egg whites

1 teaspoon vanilla

2/3 cup of sugar

1 1/3 cups of flaked coconut

Directions:

Beat egg whites and vanilla on high until soft white peaks form.  Add sugar slowly and continue beating until the peaks turn stiff.  Fold in coconut.  Drop mixture on to a greased cookie sheet and bake at 325 degrees for about 20 minutes or until edges are lightly browned.  The ladies at your baby shower will love this one!

Whipped Shortbread Cookies

Makes about 30 cookies

Ingredients:

1 cup of softened butter

1 ½ cups of all purpose flour

½ cup of icing sugar

Candies or dried fruit of your choice (colors that match your baby shower theme)

Directions:

Beat butter, flour, icing sugar until the mixture is smooth.  Spoon cookies onto a cookie sheet spaced about 2 inches apart.  Cut your dried fruit or candies and place in the center of the unbaked cookie.  Bake at 350 degrees for about 15-17 minutes, do not over bake.  Remove and let cool.  If you can find small pacifier or baby bottle shaped candies to put in the center of the cookies this would be best…sure to add the finishing touch to your baby shower.
