Baby Shower Cakes
Old-fashioned Baby
Shower Chocolate Cake
Serves 12-15
Ingredients:
¾ cup butter softened
3 eggs
2 cups of all purpose
flour
¾ cup of cocoa powder
2 ¼ cups of sugar
2 teaspoons of vanilla
1 ½ cups of milk
Directions:
-
Greece the bottoms
of two 8x8x2 inch square cake pans and line the bottom of the pans
with wax paper.

Mix together all
dry ingredients: flour, cocoa powder, baking soda, baking powder and
set aside.

In a separate bowl
beat butter on high for 1 minute, gradually add sugar while beating
on medium speed, once all sugar is added beat for about 3 minutes.
Add eggs and vanilla and continue beating for about another minute.

Add a little bit of
the dry ingredients then a little of the milk, continue doing this
until all flour and all milk is added and mixed nicely.

Pour into cake pans
and bake at 350 degrees for about 35-40 minutes.

Cool cake layers
for about 15 minutes and remove from pans.

Frost with desired
frosting. I suggest choosing a frosting color that enhances your
baby
shower theme.
Baby’s Favourite Carrot
Cake
Serves 12-15
Ingredients:
4 eggs
2 cups of all purpose
flour
2 ¼ cups of sugar
2 teaspoons of baking
powder
1 ½ teaspoons cinnamon
½ teaspoon of baking
soda
2 ¾ cups of finely
shredded carrots
¾ cup of cooking oil
¾ cup finely chopped
pecans
Directions:
-
Beat eggs and let
them sit at room temperature for 25 minutes.

Grease 2 9x1 ½ inch
round cake pans.

Mix dry ingredients
in a bowl: flour, sugar, baking powder, cinnamon, and baking soda.

In a separate bowl
mix eggs, carrots and oil.

Combine the two
mixtures and pour into cake pans.

Bake at 350 degrees
for 30-35 minutes.

Once cooled, frost
the tops and sides of the cake with cream cheese frosting (see
below).
Your baby shower guests will drool over this rich delicious cake!
Cream Cheese Frosting
Ingredients:
1 8-ounce package of
cream cheese (softened)
½ cup of butter
(softened)
2 ½ teaspoons vanilla
6 cups of icing sugar
(if icing is too runny add more icing sugar)
Directions:
-
Beat cream cheese,
butter and vanilla until light and fluffy.
-
Gradually add icing
sugar.
