Baby Quesadillas
12 Servings
Ingredients:
6 8 inch flour
tortillas
3 cups of shredded
cheese
2 cups of ground beef
5 tablespoons of diced
green Chile peppers
4 tablespoons of diced
green onions
1 cup of salsa
Directions:
Combine ground beef, green onions and chile peppers in a frying pan and
cook until meat is cooked all of the way through. Sprinkle cheese,
salsa and the meat mixture over half of a tortilla. Fold the tortilla
in half. Cook each folded tortilla in a frying pan for about 2-3
minutes (until cheese is melted). Place on a cookie sheet and keep warm
in the oven (about 250 degrees). When you are ready to serve them cut
them into baby wedges and serve with chopped tomatoes. These can be
spicy so be careful that kids and babies don’t get a hold of them. Also
warn your baby shower guests that they may be spicy, just in case
someone cannot eat spicy foods.
